Source: Produced entirely from vines grown at Pindarie. The Shiraz is clone 1654, grown on red brown earth overlying limestone to give full flavour and concentration.
Winemaking: Picked when ripe, but not over-ripe, (a subtle yet important difference) fermented on skins in small fermenters with gentle pumping over to extract colour, flavour and tannin; gently pressed and run to barrel. Shiraz loves oak and vice-versa, but we believe in balance between the two…so while this wine was matured for 16 months in both French and American oak, only 20% of those barrels were new – and the majority of these were French. The barrel adds hints of vanilla and mocha to the liquorice, ink and ripe blackberries of low-yielding Shiraz.
Cellaring: Now until 2025
Style: Richness and generosity are essential to high quality Shiraz, but a core of tannin and structure ensures longevity and harmony with foor. Our 2010 is rich and fragrant, with a svelte mid-palate and gentle astringency; it is generous but even, and will live a very long time in bottle.
Cuisine matching: With such soft rich and down to earth flavours we consider it complements everyday food such as grilled beef and lamb – but don’t overcook either!
