We love Cabernet. Its wines are often dense, tight, tannic and long-living, and when un-ripe or from the wrong site, mean and lean to go with it. To the latter: no, thanks – it’s a good thing that our soils and the warmth of our sub-region ensure generosity and depth every time.
In this wine you see the typical dark red fruits of well-ripened Cabernet (think mulberry and blackberry), plus hints of what the French call cassis, and you probably know as blackcurrant. It’s quite pretty, with violets as well.
The palate has a seamless quality, with the fruit flavours merging with those of the oak, and all underpinned by grainy tannins. For a young Cabernet, which can often be edgy, it’s got great harmony – all coming from the balance in the vineyard. That same balance means that we are confident to suggest that it will age for at least a decade.
And given Cabernet’s status as one of the great traditional varieties, drink it with Beef Wellington – a great traditional dish!
Vineyard Report: Entirely produced from Pindaries single vineyard Cabernet block. The Cabernet is just to the north of the homestead, on red earth over limestone – just like in SA’s other famous Cabernet region…
Winemaking: Tiny berries and low yields mean that our Cabernet winemaking techniques are simple and gentle: destemmed, pumped over to keep the cap wet; air-bag pressed when tannins look good. Then a long sleep in fine French oak barrels before racking, blending and bottling.
